Most of you are probably familiar with chai. It's an Indian drink flavored with spices like cinnamon, aniseed, cardamom, clove and ginger. You can usually find a powdered version of it in your grocery store near the coffee, hot chocolate and other warm drink mixes. Great stuff to cozy up with on cold nights. But did you know it also makes a great pie? Take a look at this.
Chocolate Chai Pie
12 oz. pkg. milk chocolate chips, divided
3 tbsp butter
Prepared graham cracker crust
8 oz. softened cream cheese
1/2 cup powdered chai
8 oz. thawed whipped topping
Melt 1 cup chocolate chips with butter in small saucepan over low heat. Quickly spread melted chocolate into bottom of graham cracker crust and up sides; refrigerate until chocolate is set. In the same saucepan, melt 2/3 cup chocolate chips over low heat; remove from heat and let stand 15 minutes. While chocolate is cooling, beat cream cheese and chai in large bowl until well blended. Stir in melted chocolate, fold in whipped topping; pour over chocolate-covered crust. Sprinkle with remaining chocolate chips. Chill to set.
This recipe is super-quick and easy, can be made ahead of time, and doesn't require use of the oven. It's cool, creamy and delicious, perfect for summertime enjoyment. Give it a try and see if doesn't become one of your favorites, too.
